Among Valtellina’s most famous vineyards, the healthiest and ripest grapes are selected, picked and let wither for three months. Withered grapes are then pressed and vinified in the traditional method through a long maceration. Wine is ready for the aging process, a part of it in oak barrels of 50 hectolitres and a part in barrels of 80 hl for 20 months. After some months of rest in bottles, wine is ready to be sold.
