During the domination of the Swiss State of the Three Leagues (1512-1797) vineyards were protected by guardians. This wine, 100% Chiavennasca vine varietal, is fermented between 32 and 28 °C then moved to steel tanks until December. A part of it is barrique aged for 16 months while the rest of it rests for 20 months in French oak barrels of 30 and 50 hl followed by a proper ageing in bottle.
