"La Priora" is made with Nebbiolo vine varietal, bunches are hand-picked at the end of October. Fermentation is carried out with a submerged-cap maceration of the marc for 10 days at a controlled temperature. The wine is then fine-tuned in small French oak barrels, after that is moved to bigger ones for 18 months and then is bottled for 8 more months. “La Priora” is a gem of the Sassella sub-zone, it’s characterized by a dark red color, a persistent perfume and a soft and velvety taste.
