Made with Nebbiolo vine varietal Guyot-trained on not very permeable steep sandy soil. Bunches are left on the vine until mid-November prior to a shoot trimming (late harvest) to let them naturally wither. This process promotes the natural concentration of sugar. Submerged-cap vinification lasts 10 days and then wine is fine-tuned in small oak barrels for 18 months. Once bottled, before putting it on the market, it rests for 8 more months.
