From Nebbiolo grapes, harvested at the beginning of October in fresh and ventilated vineyards, facing south-east. The pressing follows a short process of cold maceration (at + 10 °C), then there are the alcoholic fermentation and the malolactic one.
Bottled between June and July of the year after the harvest.
In a glass
Ruby-red. The nose reveals fruity and floral finesse (wild violet and unripe hazelnut). In the mouth: medium body, not strong but balanced with persistent tannins, savoury.
It is an ideal complement for the traditional Valtellina cuisine (pizzoccheri, polenta), for snacks and for all kindsof alpine soups.
Although indicated for immediate consumption, it improves with a medium aging in bottle up to 5 - 7 years.
