The Particularly sunny position of the “Sassina” vineyard, at 350-450 metres a.s.l. and the sandy soil make of it a perfect place for the ripening of the grapes. The yield is 7.000 kg per hectare. Bunches are hand-picked in October and vilified according to a maceration and fermentation process that lasts 10 days. Wine is put in steel tanks and after that it ages in oak barrels for 18 months. Once bottled, it rests for 6 more months before putting it on the market.
