The “Sassina” vineyard faces South and it is located at 350/450 meters a.s.l. on a sandy soil that permits an optimum ripening of the grapes, its yield is 7.000 kg per hectare. Bunches are harvested in October and then vinified according to a maceration and fermentation process that lasts for about 10 days. They are kept in steel tanks and then moved to oak barrels for 18 months. Afterwards, wine is bottled and rests for 6 more months before putting it on the market.
